Wheat/Gluten Free Flour Mixture
(W/GF Flour Mix is how you will see this listed in my recipes)
4 1/2 cups Brown or White Rice Flour
1 1/2 cups Potato Starch
3/4 cup Tapioca Starch
I use this mix cup for cup in all recipes that call for wheat flour. IMPORTANT NOTE! When using this flour, you will need to add 1/2 tsp. Xanthan Gum per every cup of Wheat/Gluten Free Flour mix you use.
This flour mixture has become a fast favorite of mine! It's virtually undetectable. What I mean is everyone I've had try food that's prepared with this mix can't tell the difference. In fact, rice being a lighter weight flour, this can help add fluffiness to your cookies, cakes and other creations! I mix my flour in bulk and store it in an air tight container. Don't mix up too much and not use it though! Brown and White Rice Flour can go rancid over time if not kept in the freezer or refrigerator. You don't need to keep this refrigerated, just don't let it sit for longer than a few weeks.
